Oranges, which can vary in flavor from sweet to sour, are typically peeled and eaten fresh or squeezed for juice. The thick, bitter crust is usually discarded, but can be made into animal feed by desiccation, using pressure and heat. It is also used in some recipes as a seasoning or food garnish. The outermost layer of the rind can be finely grated with a zester to produce orange zest. The zest is popular in cooking because it contains oils and has a strong flavor similar to that of orange pulp. The white part of the skin, including the marrow, is a source of pectin and contains almost the same amount of vitamin C as the flesh and other nutrients.
